In particular, it describes what is really going on (growing, harvesting, processing, etc) with our foods (especially dairy, fish, and meat) today and how all this is adversely affecting our health. It ends with practical insights for readers to enrich their lives and empower them to make informed choices about food.

Using both science and common sense in large doses, we painstakingly prepare customised, functional, ready-to-eat foods that are free from contaminants and full of nutrition.

Our primary requirements are that our meals must 1) be Clean Label (see attributes on page 56, definition in Glossary) plant-based whole foods, and 2) provide maximal nutrient and optimal absorption. These essentially translate to meals that a) have a direct, positive, measurable impact on health bio-markers; b) are ethically sourced, prepared, and made; c) are sustainable for our planet; and d) satisfyingly pass the taste test. How do we know our meals work? We put them through a clinical trial, described later.

Details are in Chapter 2, but first we introduce the science behind the idea of Food As Medicine.

Science of Food as Medicine

There are many pathways to health. However, in this chapter we are speaking of the role of food as one of the most important foundations for building a healthy body.

The idea of treating food as medicine is not new. It was Hippocrates, traditionally considered in the Western tradition to be the Father of Medicine, who famously said over 2,400 years ago, “He who does not know food, cannot understand the diseases of man. Let your food be your medicine and your medicine be your food”. To him, food and medicine were interchangeable. The right foods can heal you, just as medicine is supposed to. In relying on food as medicine, you don’t have to rely on modern pharmaceutical drugs that in fact do not really build health, but merely suppress disease symptoms.

Before proceeding further, let’s understand some key factors in maintaining health. The two main causes of disease are nutritional deficiencies and toxins in the body. These two basic causes will compromise the health of any person.
